This is a quote from
http://www.lyghtforce.com/Homeopathy...ue4/muller.htm, a very
interesting article about a chronic equisetum case (with no bladder
issues at all, BTW).

"my [father had] been suffering from diabetes for a long time. I still
remember that he used to eat a lot of sauerkraut before he went in for
a check up."

Can anyone tell me what is the connection between sauerkraut and
diabetes?

So maybe the writer didn't mean to imply that he was taking sauerkraut
for the diabetes; I've never heard that connection before.
I think it must be a bit of an acquired taste. :-) But I find it
tasty with cottage cheese (balances the blandness), and either raisins
or something crunchy for texture. Guess I should start eating more of
it! It also makes a nice salad dressing, with mayo.

If it is aged in a crock the way saurkraut used to be without being pasturized or heated after culturing, it contains many beneficial bacteria and enzymes, and claimed to help all kinds of health issues. You can also age other vegetables in the same way with the same benefit - it doesn't have to be cabbage. But today's commercial saurkraut that you get at the grocery store probably isn't so useful because they pasturize it, which kills the enzymes and beneficial bacteria. I noticed some co-ops are selling the real thing now in the refrigerator section, albeit pretty pricey.
