Melanoidins in coffee and antioxidants
That the majority of antioxidant capacity found in coffee is due to the melanoidins - or the brown colored polymetric substances that are formed during roasting.
Contrary to popular belief, chlorgenic acid only accounts for 20-30% of the antioxidant capacity.
